I have gotten a bit more creative in the kitchen in terms of not being afraid to try new recipes. This one was a bit out of the box for me. Using bone-in thighs and legs, this dish utilizes fresh oranges and lemons to create a delicious EASY meal in about an hour!
My favorite recipes are ones that are both easy and not incredibly time consuming. We both work long days and coming home only to cook for another couple of hours isn’t always ideal (especially when we’re hungry!). You can prep this meal ahead of time, come home and pop it into the oven.

This does make A LOT of food so if there are only two of you you’re going to get a lot out of it! Even though we ate our share for dinner we had a lot of leftovers. They were great for meal prep and an easy lunch the next night. Get creative!
